Change in the weather

There is a change in the weather. My home smells like fall today.

That crisp, biting, cool, cinamonny weather.

You heard right, cinamonny. I am trying out my new food dehydrator.

A friend of mine in Utah used to make the most delicious dried apples.

She would bring a bag to the elementary where I worked and share them with everyone.

They were so soft and cinamonny.

So I associate fall with that cinamon smell. Right when the stores bring the Christmas decorations in and the whole display smells like cinamon. And when zucchini bread becomes prevalent because you can’t use up your zucchini fast enough and the kitchen smells of sugar and spice and all things nice, including cinamon.

Well now I can add the smell of cinamon once again due to my food dehydrator.

Mmmm. Love that smell.

Dehydrator set to go

The recipe is simple.

Cut, core and slice your apples. I used Macintosh apples this time.

Blot off the excess moisture on the apples then shake them in a bag of cinamon.

Lay them out on the trays for the dehydrator. Then set a timer to turn them every 2 hours and rotate trays, last one up to the top. And repeat for up to 8 to 10 hours at 158 degrees ferenheight.

Then cool and bag them up. Store in freezer or dry Can them.

Zucchini bread

More vegetables for eating!

Check another one off my list.

Trying to keep up my goal of eating more vegetables, I can add zucchini to the list.

I dont really think that is supposed to be the way to do it, but… hey. I ate more (kinds instead of quantity) veggies. Lol

Still a work in progress.

Zucchini bread w/cream cheese frosting and nuts.

Zucchini bread

4 Tbsp melted butter

1/4 Cup almond flour

1/4 Cup coconut flour

1/4 Cup grated zucchini ( ooops, forgot to list this. Updated)

2 eggs

2 T greek yogurt

1 T cinnamon

1 tsp nutmeg

1 tsp vanilla

1/2 tsp baking soda

1/4 Cup walnits

Mix well. Place in microwavable bowl. Zap for 3 minutes. Then 1 min intervals until center is done.

Cool down and frost with your favorite cream cheese frosting

Ok. Veggies, here I come. Watch out!
